At KRATE, the container park at The Grove, restaurants cook inside shipping containers. A container kitchen fit a cook line, refrigeration, and air conditioning into a space ranging from 320 to 960 square feet when the 94-container park opened in 2022.

A Full Kitchen in a Few Hundred Square Feet

01

What the unit's power has to carry

A container kitchen is small in floor area and full-size in equipment. A fryer or griddle, a cooler or freezer, a prep table, and the air conditioner all draw power from the electrical supply serving the unit, and during service, much of that equipment runs at once. How much that supply can carry is indicated on the unit's panel and labels.

02

Before another piece of equipment goes in

A second fryer, another freezer, or an ice machine adds to a load that may already be close to the unit's capacity. The new equipment's nameplate is added to what's already connected and compared with the panel's capacity and the feed behind it. The answer can be a new circuit. It can also be that the unit has no capacity left, which is worth knowing before the equipment is delivered.

In a kitchen this tight, a repair at the panel or behind the line can't happen while cooks are working there.

We don't do appliance repair, and that includes kitchen equipment. A fault in a fryer, griddle, or cooler is reported to the equipment's service company.

Moving Into a Suite

When a Container Kitchen Moves Into a Full-Size Suite

One of KRATE's operators is growing past the containers. In 2026, one of the park's eateries opened a sister restaurant with a full breakfast, lunch, and dinner menu at The Hub at Lexington, a new center of about 40,000 square feet off Wesley Chapel Boulevard.

  • The equipment list grows: A suite has room for what the container couldn't hold: a walk-in cooler, a dish machine, and a longer cook line. The panel schedule is written for the full list.
  • The power may not match: Equipment carried over from the container was bought for the voltage and phase of the supply there. A suite can be fed at 208-volt, three-phase, where a fryer or oven built for 240 volts produces less heat, and a compressor may not be rated to run. Each nameplate is checked against the suite's service before the equipment is moved.
  • There are more rooms to light: A container is one room. A suite adds seating, restrooms, a dish area, and storage, and the state gives each kind of area its own light level.

If the suite's cook line goes under a hood, the electrical work also includes the shut-off wiring between that equipment and the hood's suppression system.

Kitchen Light Levels

Light Levels the State Sets for a Restaurant

Florida's Division of Hotels and Restaurants reviews plans for a restaurant in a newly built or converted space and recommends completing the review before construction starts. Its guidelines, the same statewide, set a light level for each area and ask applicants to show compliance on their plans, so the fixture layout is drawn to these numbers before the ceiling is wired.

Where open or exposed food is stored, prepared, or displayed, the guidelines call for light fixtures that are shielded, coated, or covered. So the fixture over a prep table is chosen for its output and for its lens or shield, and a walk-in or a storeroom gets enough fixtures to reach its own level.

Frequently asked questions

The State's Rules After Opening Day

Does a remodel go back through the state's plan review?

Yes. A remodel is on the division's list, along with a restaurant reopening after a closure of at least 18 months. The division says to expect a review within 30 days for applications submitted online. When a remodel moves the prep area, the dish area, or storage, the lighting for the new layout goes on those plans.

Can the dining room lights stay dim and still meet the state's levels?

The state's levels are tied to food work, self-service, sinks, restrooms, and storage. For other areas and rooms, the figure is 10 foot-candles at 30 inches above the floor during periods of cleaning. A dining room on dimmers needs a setting that brings it up to that level for cleaning, and a self-service counter in the room needs 20 foot-candles of its own.

Pricing

Rates and Quotes for Kitchen and Dining Room Work

01

Repair and troubleshooting visits are billed by the hour from arrival: $100 residential, $150 commercial, one-hour minimum, then half-hour increments, plus materials. No trip charge and no service fee. No hidden fees: the 3.5% surcharge on card and ACH payments is listed in our terms.

02

We don't do upfront pricing. No job has a standard price with us: each one is tailored to the property and the work you've asked for, and priced once we've seen it.

We offer free estimates on installs, upgrades, and replacements in our service area. Estimates aren't free when the job needs troubleshooting or testing to price, falls after hours or outside our service area, needs several meetings to gather information, or is new construction or a custom remodel with multi-party walk-throughs. For most jobs, estimates arrive by email by the end of the next business day, and quotes are good for 30 days.

03

Custom homes and large or multi-phase projects are estimated as soon as we can, or on the timeline your project sets.

What's covered after a kitchen job

04

If something we installed fails because of our workmanship within 30 days of completion, we waive the hourly labor to put it right. Materials Kennedy Electric purchases for your job carry the manufacturer's one-year warranty. To replace defective materials we supplied, or materials damaged by storm, flood, fire, or other acts of God, we charge a reduced warranty labor rate of $50 an hour residential and $75 an hour commercial. The warranty does not cover materials not purchased by Kennedy Electric, work performed by the customer, or materials the customer purchased or damaged. Our warranty terms are printed on the estimate, the invoice, and the receipt, and the product boxes stay with you so you can register each product with its manufacturer.
